Calling all Wilderness Union foodies! At our next monthly Cooking Club meetup, we will be cooking Thai recipes from Sabai: 100 Simple Thai Recipes for Any Day of the Week by Pailin Chongchitnant.

Sabai: The state of being when you're at ease. Comfortable. Relaxed.

In this cookbook, you'll find 100 easy Thai recipes from YouTuber and author of Hot Thai Kitchen. Pailin takes you through every recipe with her signature level of detail and warm, encouraging style. She will empower you to make Thai food part of your everyday routine, with a compilation of authentic and straightforward recipes that are quick to make and delicious to eat. From prepping, to cooking, to eating, the dishes in this book can be done sabai sabai ("chill chill"), as the saying goes.

Whatever you’re in the mood for, you’ll find inspiration in Pailin’s easy, yet flavorful, creations: appetizers like Fish Sauce Wings or Roti with Yellow Curry Dip; mains like Weeknight Khao Soi or Minimalist Pad Thai; and desserts like Banana Coconut Sundae or Black Beans & Sticky Rice.

With a full section on Thai pantry staples and common ingredient substitutions, this cookbook has everything you need to make your favorite dishes at home. There is also a section on how to compose the perfectly balanced Thai meal, with specific recipe pairings and ideas to make sure you’ve got the sweet, salty, sour, and spicy elements covered.

This is a no-pressure, beginner-friendly club! There are simple recipes to choose from and easy ingredient swaps if needed.

19:00 – Meet in downtown Toronto in the Yonge / College area with your dish. The exact location will be shared on the event Discord (members only).

19:30 – The feast begins! Please be on time.

Member-led outings are organized by our community, not by Wilderness Union. We don’t manage the plans, staff, or safety protocols, so you join at your own risk. Please look out for yourself and one another, and have fun!

Food and Drink
You'll need to bring a packed lunch and water for any of our day trips that don't explicitly say we're making a stop at a restaurant. Where we stop at restaurants, you are responsible for the purchase of any food. Full details are available at the adventure plan, shared above on registration.

Members Only
Please note that you'll need an active membership at the time of your adventure to attend. If you booked during a trial that didn't continue or your membership has lapsed, you will need a new membership to attend.

Cancellations made:
More than 10 days before the event
: Will receive a full refund minus a 5% admin fee.
7–10 days before the event: 50% refund.
Less than 7 days before the event: No refunds.
Weather or emergency cancellations: If an event is canceled due to severe weather or other uncontrollable factors, members can receive a full credit to their account.

We offer a unique alternative to commercial tours. We don't just show you incredible natural wonders, we teach you to become confident in nature so you can discover the life changing magic of the outdoors. You'll love it here if:
- You want to make real friends, not just small talk with strangers
- You prefer "off the beaten path" over "all-inclusive resort"
- You're happy to pitch in and learn new skills (e.g., helping with camp setup or group tasks)
- You value the journey and the company as much as the destination

Who Else Will Be There
WU is aimed at a younger generation of outdoor lovers who don't see themselves represented in traditional hiking clubs and our members are typically 20-40 years old. Whether you're brand new to the outdoors or have plenty of experience, you'll find something for you.

Our Guides
All of our guides are highly qualified, passionate outdoor lovers, just like you. They love to share their knowledge and will help you see our destinations in another light, often teaching you something along the trail.

Other than my dish, what else do I bring?

Bring your own plate, bowl, mug, and cutlery to eat with, along with any serving utensils you need. Feel free to bring non-alcoholic beverages for yourself or to share (e.g. tea, coffee, or bonus if they’re on-theme).

Where do I sign up for a recipe?

Check the Discord event thread to access the Google Doc where recommended cookbook recipes will be posted. You can see what everyone has chosen and pick one for yourself that fits the group’s menu.
